so which part or factor was causing the "G" note to be ever so slightly 'off' the perfect mark?

The tuner, the neck, the intonation, or the 'pluck' of the string being slightly sharp then falling back?
just curious what you found to be the 'culprit'.

Intonation. Sounds off in G and C chords.
